This is a Betty Crocker recipe that I modified to lower the fat content.

Recipe Ingredients for Zucchini Muffins

2 2/3 cup sugar
1/3 cup oil
1/3 cup applesauce
3 cups zucchini, shredded
2/3 cup water
2 eggs
2 egg whites
1 1/2 cup whole wheat flour
1 1/2 cup flour
1/3 cup flour
2 tsp baking soda
1 tsp cinnamon
1 tsp ground cloves
2 tsp vanilla
1/2 tsp baking powder
2/3 cup nuts

Recipe Directions for Zucchini Muffins

  1. Heat oven to 350 degrees. Grease bottom of muffin tins.

  2. Mix sugar and shortening .

  3. Stir in zucchini, water, and eggs.

  4. Mix in flour, baking soda, salt, cinnamon, cloves, vanilla, and baking powder.

  5. Stir in nuts.

  6. Pour into pan.

  7. Bake until tooth pick inserted inserted in the center comes out clean, about 20 minutes.
