3 EGGS
1 1/2 cups SUGAR
1 cup OIL, CANOLA
3 cups FLOUR
1 teaspoon SALT
1 teaspoon BAKING POWDER
1 teaspoon BAKING SODA
1 teaspoon CINNAMON
1 teaspoon NUTMEG
1 teaspoon VANILLA
2 cups ZUCCHINI

Recipe Directions for ZUCCHINI MUFFINS

  1. GRATE ZUCCHINI AND DRAIN.

  2. IN A LARGE BOWL BEAT EGG UNTIL LIGHT.

  3. ADD SUGAR, OIL AND VANILLA BEAT UNTIL MIXED

  4. FOLD IN SUGAR, FLOUR, BAKING SODA, BAKING POWEDER, CINNAMON, AND NUTMEG.

  5. FOLD IN ZUCCHINI.

  6. SCOOP INTO 30 MUFFIN CUPS.

  7. BAKE @ 350 FOR 25 MINUTES OR UNTIL DONE BY CHECKING WITH A TOOTHPICK.

  8. ALLOW TO COOL 10 MINUTES AND REMOVE FROM MUFFIN PAN.
