lower fat muffins...can replace oil with apple sauce and substitute ww flour for white.

Recipe Ingredients for zucchini muffins


Dry ingredients:
1 cup white flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup sugar
1/4 teaspoon cinnamon

Wet ingredients:
6 tablespoons egg whites
2 c. zucchini
1 tablespoon lemon zest
1 teaspoon lemon juice
1/4 c. vegetable oil
1 1/4 cups 1% milk

Recipe Directions for zucchini muffins

  1. shred zucchini and allow to drain in a colander for a few minutes

  2. mix wet and dry seperately...combine, just until moist.
