Recipe Ingredients for Zucchini Muffins

2 cups all purpose flour (unbleached)
2 cups whole wheat flour
1/4 cup bran
1 cup sugar
4 tsp baking soda
4 tsp cinnamon
1 tsp salt
1/2 tsp cloves
4 cups zucchini, shredded
1 cup carrot, shredded
1 cup currants
1 1/2 cup unsweetened applesauce
1/2 cup nonfat milk
4 tsp vanilla
5 egg whites

Recipe Directions for Zucchini Muffins

Preheat oven to 350F. Spray muffin tins with nonstick spray. Combine flours, sugar, baking soda, cinnamon, salt & cloves. Add apples, carrots & currants; mix well. Add applesauce, milk, vanilla & egg whites; stir just until moistened. Fill muffin cups 3/4 full. Bake for 20 minutes.
