Turned out well. I made 6 large muffins and replaced some flour with protein powder.

Recipe Ingredients for Zucchini Muffins (low fat)

2 egg whites
1/2 cup applesauce, unsweetened
1 cup splenda
1 cup zucchini, grated
1/2 tsp vanilla
1 1/2 cup whole wheat flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon, ground
1/2 cup coconut, flaked, unsweetened

Recipe Directions for Zucchini Muffins (low fat)

Mix egg, applesauce, splenda together, stir in vanilla and zucchini. Mix dry in seperate bowl and then wet in dry mix well. Bake at 350F about 20 min or a loaf of 9*5*3 about an hour.
