Recipe Ingredients for Zucchini Medley

4 1/4 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 large Onions
6 clove Garlic
1 3/4 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
2 1/2 large whole (3" dia) Tomatoes, Red, Ripe
1/2 cup leaves, whole Basil, Fresh
1 tbsp Italiano
1 tbsp Olive Oil

Recipe Directions for Zucchini Medley

  1. chop all veggies and garlic

  2. saute, garlic add onions, then red pepper

  3. saute for a few moments, add zucchini and tomatoes..

  4. reserve a 1/2 cup of tomatoes plalce in blender with spice and basil

  5. blend and add to the veggies..cook on low until reduced and soft
