have substituted canola oil with the applesauce

Recipe Ingredients for zucchini loaf

1 cup grated zucchini
1 cup sugar
1 egg
1/4 cup unsweetened applesauce
1 1/2 cup all purpose flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp baking powder
1/2 tsp salt

Recipe Directions for zucchini loaf

  1. 1 Beat together zucchini, sugar and egg. Add applesauce and mix well. Stir together flour, cinnamon, baking soda, nutmeg, baking powder, and 1/2 teaspoon salt. Stir into zucchini mixture. Pour into a greased loaf pan. Bake at 350 until done. 30 to 40 minutes. Cool in oan on rack for 10 minutes;remove from pan. Cool thoroughly on rack. Wrap and store overnight before slicing. Makes one loaf. 12-14 slices
