Recipe Ingredients for Zucchini lemon muffins

2 cups flour
1/2 cup sugar
1 tbsp baking powder
2 tsp lemon rind
1/4 tsp salt
1/4 tsp ground nutmeg
1 cup zucchini, shredded
3/4 cup skim milk
3 tbs vegetable oil
1 egg

Recipe Directions for Zucchini lemon muffins

  1. Combine the 1st 6 ingredients in a bowl, and make a well in the center of mixture.

  2. Combine zucchini, milk, oil and egg; stir well.

  3. Add zucchini mixture to flour mixture, stirring just until dry ingridients are moistened.

  4. Divide batter evely among 12 greased muffin cups.

  5. Bake at 400 degrees F for 20 minutes or until golden. Remove from pans immediatly to cool on a wire rack.
