these latkes have cheese adn flour to hold them together with the egg. Relatively lowfat, the recipe includes 1/4 cup plain lowfat yogurt to go with each serving of 5 latkes, (~210 calories total)

Recipe Ingredients for zucchini latkes

2 lbs zucchini
1 medium potato, peeled
1 tbsp lemon juice, fresh
1 cup green onions, chopped
1/2 cup cheese, like Lorraine, grated
2 cloves garlic minced
1 egg
3/4 cup flour
1/2 tbsp sugar
1/2 tsp sea salt
1/2 tsp pepper
1 1/2 cups lowfat plain yogurt

Recipe Directions for zucchini latkes

  1. grate zucchini and potato

  2. squeeze out as much excess water as possible between two clean towels

  3. put vegetables in large bowl

  4. sift together flour, sugar, salt and pepper and toss

  5. add lemon juice, onion, cheese, garlic, and egg and toss

  6. heat non-stick skillet or well seasoned pan

  7. just before placing small pile of mixture on skillet, spray the area with canola oil

  8. gently flatten into a patty

  9. spray tops lightly with canola oil

  10. turn when edges start to turn golden and "fry" other side

  11. remove to paper towels

  12. serve immediately
