Zucchini Lasagne Recipe

Lasagne-style dish with traditional Italian spices made using zucchini instead of pasta, and no meat. This dish DOES contain cheese and eggs.

Recipe Ingredients for Zucchini lasagne

3 medium zucchini
1/4 cup green pepper
1/2 medium onion
2 medium mushrooms
2 cups marinara sauce
1 1/2 cups (part skim) mozzarella cheese
1 cup (fat free) cottage cheese
2 egg whites
2 dash nutmeg
1 tsp (dry) basil
1 tsp (dry) oregano
2 tbsp diced garlic
1 salt (to taste)
1 pepper (to taste)

Recipe Directions for Zucchini lasagne

  1. in mixing bowl, beat egg whites. Add cottage cheese. Stir in nutmeg. Mix well. spray frying pan lightly with cooking spray, pref olive oil. saute green pepper, onion, mushrooms, and garlic until onion is translucent. Add marinara sauce, simmer about 5 minutes to mix flavors, then remove from heat.

  2. THINLY slice zucchini lengthwise. Lightly spray 9x13 baking pan. place a single layer of zucchini in pan. top with half of the cottage cheese mixture and a thin layer of mozzarella. Add another layer of zucchini, and a layer of tomato sauce mixture, and more mozzarella. There should be enough to repeat another layer of each, ending with cheese. Cover and bake at least 45 minutes at 350 degrees. Depending on the moisture in your vegetables, you may need to bake a little longer.

  3. Note: The oil used for sauteing and for coating the baking pan was not included in the calorie count, but not more than a tsp was used in total for both instances.
