Recipe Ingredients for zucchini lasagne

1/3 cup olive oil
1 1/2 lb zucchini
1 3/4 cup bread crumbs
2 tbsp butter
1 clove garlic
1/2 cup shallots (5)
2 carrots
8 oz asparagus
3/4 cup half and half
1/2 cup parmesan cheese

Recipe Directions for zucchini lasagne

  1. Oven - 400.

  2. Heat 2T oil and brown zucchini.

  3. Saute bread crmbs in same pan with 2T oil, 1T btter, and garlic - 5 min. Remove and set aside.

  4. Saute shallots and carrots in remaining oil until lightly browned. Add asparags and cream and cook 10 min. Season with salt.

  5. Line baking dish with zucchini strips. Cover with layer of asparagsa nd sprinkle with bread crmbs and parmesan. Repeat ntil all ingredients are in dish, finishing with bread crmbs and parmesan. Dot with remaining butter.

  6. Bake 15-20 min.
