Low-carb noodle-less lasagna with lower fat cheese

Recipe Ingredients for Zucchini Lasagna

20 oz. extra lean ground turkey
23 1/2 oz Organic Tomato Basil Pasta Sauce
3 medium zucchini
15 oz. part-skim ricotta cheese
16 oz. reduced fat mozzarella cheese
1 large egg
10 oz spinach

Recipe Directions for Zucchini Lasagna

  1. Brown turkey meat and add tomato sauce and spinach.

  2. Slice zucchini into thin strips with vegetable peeler to mimic lasagna noodles.

  3. Mix ricotta cheese with egg, some mozzarella, and spices of choice (basil, oregano, etc.).

  4. Lightly spray 9 x 12 glass baking dish.

  5. Layer the lasagna starting with zucchini, meat sauce, ricotta, etc.

  6. Once dish is filled, cover with mozzarella cheese

  7. Bake 45 min. covered at 375, then uncovered for 15 min.

  8. Let stand 10 minutes before serving.
