Recipe Ingredients for Zucchini Lasagna

2/3 cup tomato sauce
2 large zucchini, sliced long
5/8 cup fat-free cottage cheese
1/4 cup Shredded Fat Free Mozzarella Cheese
1/2 cup diced mixed vegetables

Recipe Directions for Zucchini Lasagna

  1. Preheat oven to 350.

  2. Thinly slice the zucchini (1/8 inch).

  3. Spread half of the sauceon baking dish

  4. Add a layer of overlapping zucchini slices.

  5. Add 1/2 of the cottage cheese, 1/3 of shredded cheese, and 1/2 of the veggies.

  6. Repeat layering with zucchini, cottage cheese, mozzarella cheese, and vegetables.

  7. Top with remaining sauce and cheese.

  8. Bake for 1 hour until bubbly.

  9. Let cool, then refrigerate overnight.

  10. Cut into pices, reheat, and serve.
