Zucchini lasagna - uses zucchini instead of noodles

Recipe Ingredients for Zucchini Lasagna

1 pound ground beef, browned
1 onion, browned
1 teaspoon garlic, browned
2 cups fresh tomatoes
2 cups zucchini, sliced
1 1/2 cups low fat cottage cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella

Recipe Directions for Zucchini Lasagna

  1. Brown beef, onion and garlic. Add spices (pepper, salt, oregano, basil, Italian seasoning, etc. to taste)

  2. Add tomatoes; simmer until hot

  3. Layer zucchini, meat mixture, and cheese 2 times

  4. Bake at 350 for 30 minutes or until cheese bubbles and zucchini is tender
