Thinly sliced zucchini replaces the noodles in this light vegan version of "lasagna."

Recipe Ingredients for Zucchini Lasagna

1 medium zucchini
3 slices silken tofu
2 tbs nutritional yeast
1 cup canned tomato sauce
1/4 cup mushrooms
4 pieces sundried tomatoes

Recipe Directions for Zucchini Lasagna

  1. Thinly slice zucchini lengthwise into lasagna-like strips.

  2. Season canned tomato sauce with italian seasoning.

  3. Dice sundried tomatoes and add to sauce.

  4. Dice mushrooms and add to sauce.

  5. Mash tofu with nutritional yeast and italian seasoning.

  6. In a baking dish, layer zucchini noodles, tofu, and sauce.

  7. Bake for 25-30 minutes at 350.

  8. Turn oven off but do not remove dish.

  9. Let sit for at least 10 minutes in the warm oven.

  10. Sprinkle with more nutritional yeast or vegan parmesan!
