A Lasagna Recipe Without the Pasta

Recipe Ingredients for Zucchini Lasagna

1 1/2 cup ricotta cheese
3/4 cup fat free cottage cheese
1 1/2 cups grated mozzarella
4 zucchinis
28 oz tomatos
14 oz tomato sauce
1 lb lean hamburger
2 tablespoons olive oil
2 cups chopped frozen spinach
1 tablespoon dried fennel seeds
1 tablespoon paprika
1 teaspoon Cayenne Pepper
2 tablespoons chopped garlic
3 tablespoons red wine vinegar
1 red bell pepper, chopped

Recipe Directions for Zucchini Lasagna

  1. Drain spinach using a colander and a kitchen towel, wringing out as much water as possible.

  2. Drain cottage cheese using a fine strainer, pressing against the sides to extract the whey.

  3. Prepare hamburger meat by browning meat in two tablespoons olive oil in a large skillet.

  4. Add fennel seeds, garlic, and paprika.

  5. When meat is brown and cooked through, add red wine vinegar, chopped bell peppers, canned tomatoes, and tomato sauce.

  6. Leave sauce at a simmer while you prepare the other ingredients.

  7. Mix the ricotta cheese and cottage cheese with the spinach until smooth in food processor. The mixture will be smooth and paste like.

  8. Slice zuchini lengthwise in thin strips, leaving the skin on.

  9. Assemble as a lasagna in a 9 by 13 baking dish, making sure that you sprinkle a small amount of mozzarella between each of the layers and on top.

  10. You will probably have to spread the cheese spinach mixture evenly on each slice of zucchini as you layer it, as the mixture is thick.

  11. Bake in oven at 350 for 40 minutes. If desired, turn temperature up the last 5-10 minutes to brown the cheese on top.
