Fresh tomato sauce combined with whole wheat lasagna noodles, zucchini, ricotta and pesto

Recipe Ingredients for Zucchini Lasagna

1 1/2 pounds tomato
4 cloves garlic
1 teaspoon olive oil
1/2 teaspoon basil
1/2 teaspoon oregano
1/8 cup red wine
6 oz. ricotta cheese, fat free
2 tablespoons pesto
6 oz whole wheat pasta
3 cups zucchini

Recipe Directions for Zucchini Lasagna

  1. Start off by chopping up the tomatoes and crushing the garlic.

  2. Heat the oil in a heavy cast iron skillet.

  3. Add the garlic and saute for a moment or two.

  4. Then add the chopped tomatoes, basil, oregano and wine.

  5. Season with salt and pepper if desired.

  6. Let simmer uncover breaking up tomato pieces as they soften.

  7. Meanwhile bring some water (I used a bunch and after doing the zucchini, used it to cook the pasta too) to the boil and blanch the zucchini.

  8. I used 3 small ones for this recipe and cooked them about 5 minutes.

  9. Once removed, toss in the lasagna noodles to cook.

  10. Rinse under cold water, cool, slice lengthwise in 1/4 inch strips.

  11. Mix the ricotta and pesto.

  12. To assemble put a small layer of sauce into a casserole.

  13. Follow with a layer of pasta.

  14. Spread this with a thin layer of ricotta mixture.

  15. Layer with zucchini strips.

  16. Cover that with sauce and repeat again beginning with pasta.

  17. Finish off with some lasagna if there is some left and a bit more sauce.

  18. Cover with al-foil and bake in 400 degree oven for about 20 minutes.

  19. Remove foil and bake a bit longer if you want to sprinkle with some cheese (not included in recipe).
