Made this as a light vegetarian white lasagna

Recipe Ingredients for Zucchini Lasagna

2 large zucchini, thinly sliced lengthwise like noodles
1/3 cup pinenuts, crushed
8 oz fresh mozarella, thinly sliced crosswise
1 pint tomatoes
1 clove garlic, minced
4 T basil, chopped
1/2 c shallots, chopped
2 T parmesan
2 T olive oil
1 cup sour cream

Recipe Directions for Zucchini Lasagna

  1. Roast thinly sliced zucchini, pinenuts, tomatoes, garlic, onion until soft with 1 T olive oil.

  2. Mix pinenuts, 2 T basil, garlic and onion with sour cream.

  3. Brush small lasagna pan with 1 T oil, layer with 1/3 zucchini, then 1/2 sour cream mix, 1/3 zucchini, 1/2 sour cream mix, 1/3 zucchini, top with sliced mozarella, parmesan, tomatoes, 2 T basil

  4. Bake aat 350 until brown and bubbly
