Recipe Ingredients for Zucchini Lasagna

24 ounces zucchini
1/3 cup chopped onion
4 ounces lean ground beef
4 ounces turkey italian sausage
15 ounces tomato sauce
1 teaspoon fresh oregano
1 teaspoon fresh basil
1/8 teaspoon black pepper
2 eggs
2 tablespoons flour
2 cups shredded reduced fat mozzarella
2 cups cottage cheese

Recipe Directions for Zucchini Lasagna

  1. -Slice zucchini lengthwise into 1/4" thick slices

  2. -Brown meat with onions until onion is tender; drain fat

  3. -Bring tomato sauce, oregano, basil, and pepper to boil and simmer for 5 minutes

  4. -combine egg and cottage cheese

  5. -arrange half of sliced zucchini in layer on bottom of baking dish

  6. -sprinkle with 1 Tbsp flour

  7. -top with cottage cheese mixture

  8. -top with half of meat mixture

  9. -top with 1 cup mozzarella

  10. -add another layer of zucchini and sprinkle with flour

  11. -top with remaining mozzarella

  12. -top with remaining meat mixture

  13. Cover and bake at 375 for 45 minutes or until zucchini is tender; let stand for at least 10 minutes before cutting.
