Recipe Ingredients for Zucchini lasagna

16 oz Extra Lean Ground Beef
0.33 cup, pieces or slices Mushrooms
1 slice, medium (1/8" thick) Onions
4 serving Fresh Mushroom Pasta Sauce
1 medium Squash, Summer, Zucchini, Includes Skin
2 serving Part Skim Mozzarella
1 cup (not packed) Cottage Cheese, Lowfat, 1% Milkfat

Recipe Directions for Zucchini lasagna

  1. Slice zucchini lengthwise. Make slices about 1/8in thick or less if possible. These are ur noodles!

  2. Place in preheated oven to roast slightly until soft and some moisture has evaporated

  3. Brown beef and mushrooms and onions.

  4. Add half the spaghetti sauce and let simmer

  5. Line baking dish with zucchini strips

  6. Coat with light layer of cottage cheese, followed by meat mixture

  7. Repeat until zucchini, cottage cheese and meat mixture is gone

  8. Coat top layer with remaining spaghetti sauce

  9. Cover with mozzarella and bake until melted
