Zucchini Lasagna Recipe

Recipe Ingredients for Zucchini Lasagna

4 large raw Zucchini
226 2/5 grams Mozzarella, Part Skim Milk Cheese
1 cup Pasta Sauce
3 tbsp Parmesan, Shredded Cheese
8 oz Cottage Cheese, Lowfat, 1% Milkfat
1 large Egg, Whole
0.5 fl oz Milk
3 oz Fresh Sweet Italian Turkey Sausage
1/4 cup AllWhites

Recipe Directions for Zucchini Lasagna

  1. Cook Italian turkey sausage, crumbling as it cooks.

  2. Thinly slice zucchini lengthwise and lay on cookie sheet sprayed with cooking spray. Broil on high until slightly brown, turning after the first 5 minutes.

  3. Combine cottage cheese, egg, egg whites, 1 tbsp parmesan cheese, garlic, and pepper in a blender; process until smooth.

  4. Arrange 1/3 of zucchini on bottom of small baking dish. cover with 1/2 of cottage cheese mixture, 3 tbsp of pasta sauce, 1 tbsp of the sausage, and 1/2 c mozzarella. Repeat this layer. End with the last 1/3 of the zucchini and the rest of the parmesan cheese.

  5. Bake at 375 for 30 minutes. Heat the remaining pasta sauce and spread it on the top.

  6. Slice and serve.
