Zucchini Lasagna Recipe

Lasagna with thinly sliced zucchini instead of lasagna noodles

Recipe Ingredients for Zucchini Lasagna

3 medium Squash, Summer, Zucchini, Includes Skin
16 oz Ground Turkey, 85% Lean
1 medium (2-1/2" dia) Onions
29 oz Diced Tomatoes
2 clove Garlic
1 tsp Italian Seasoning
1 tbs Extra Virgin Olive oil
100 g part skim Mozzarella
300 g Low fat cottage cheese
1/4 cup parmesan cheese
2 cup shredded carrots
2 cup shredded zucchini
2 cup shredded yellow squash

Recipe Directions for Zucchini Lasagna

  1. Brown meat.

  2. Slice 3 med zucchini in thin strips and bake on tray at 425 for about 10 min.

  3. In fry pan heat oil to medium high and add chopped onion and garlic. Let sweat.

  4. Blend diced tomatoes and italian seasoning. add to onion and garlic. Let simmer for about 5 min.

  5. Add browned meat to the sauce. let simmer for 5-10min.

  6. Sauté shredded vegetables and add to sauce.

  7. In a bowl mix cheeses.

  8. In a lasagna pan layer 1/3 sauce and veggies and 1/3 cheese mixture, and zucchini strips like lasagna until all sauce is gone. Save some cheese for the top!

  9. Bake at 350 for approx. 20 min or until cheese is melted.

  10. Let rest for 5 min then enjoy.
