Recipe Ingredients for Zucchini Lasagna - HCG

4 medium raw zucchini, sliced lenghtwise
1 medium Onion
1 medium red bell pepper
3 diced tomatoes
1/4 cup dry cooking wine
1/4 cup tomato paste
2 chicken bouillon cubes
1 tbsp Italian seasoning
1 clove Garlic
1/2 lb. hamburger or Italian sausage
15 oz fat free Ricotta cheese
1/4 cup Parmesan cheese
2 eggs, extra large
1 cup mushrooms, sliced
1 cup Mozzarella cheese, part skim

Recipe Directions for Zucchini Lasagna - HCG

  1. Brown the meat adding onions and peppers when almost finished browning.

  2. Add the tomatoes, wine, chicken bouillon, herbs, salt and pepper (season to taste) and the meat and let it cook very slowly for at least 1 hour stirring once in a while. (The sauce wont be very "liquid", the zucchini will release water upon cooking so it is best for the sauce to be "chunky".)

  3. Cut the zucchini lenghwise very thin (about 1/4 of an inch).

  4. Slice the mushrooms.

  5. Mix the ricotta with the eggs, parmesan, milk and add the mushrooms.

  6. Add salt and pepper to taste.

  7. Using a 9x13 pan, add a thin layer of sauce to the bottom, add a layer of zucchini, then a layer of the filling and then a layer of sauce. Repeat. Put a 3rd layer of Zucchini and cover with the sauce.

  8. Bake for about 1 hr (until the zucchini is tender). Top with the mozzarella cheese and bake for another 10 minutes until the cheese is melted.
