zucchini with sauteed red peppers and itailian stewed tomatoes

Recipe Ingredients for zucchini itailiano

7 oz zucchini
1/2 cup white onion
1/2 cup red pepper
3 clove garlic
3/4 cup stewed tomatoes
1 tbsp Parmesan
1 tbsp fresh basil
1 tbsp fresh oregano
1 cooking spray
1 salt to taste
1 pepper to taste

Recipe Directions for zucchini itailiano

  1. saute peppers, onions and garlic till tender with ground black pepper and salt.

  2. Add stewed tomatoes.

  3. reduce by half and keep warm.

  4. in another pan, spray with cooking spray and sear zucchini with salt and pepper till lightly browned but still firm in the center. Do not over cook. remove from heat and serve on top of stewed tomatoes and peppers.

  5. sprinkle with parmesan
