Recipe Ingredients for Zucchini hash

0.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.33 medium raw Bell Pepper Red
0.33 medium Yellow Hothouse Bell Pepper
0.33 onion Yellow Onion
1 serving Salsa
1 tsp Slap Ya Mama Cajun Seasoning
1 serving poblano raw

Recipe Directions for Zucchini hash

  1. Saute 1/2 zucchini, 1/3 red and yellow bell, 1/3 yellow onion, and 1/3 poblano. (1 Tb olive oil). Sprinkle with cajun seasoning. When tender, top with a tablespoon of salsa and serve hot.

  2. Alternately, stuff into two halves of poblano, wrap in foil and bake. Top with salsa (and mozzarella if you want) and serve hot.
