Homemade cake and frosting, single 8 inch layers serving size 1/6th of a layer

Recipe Ingredients for Zucchini Fudge Cake

4 eggs
2 1/4 c sugar
2 tsp vanilla
3/4 c butter
3 c flour
1 c unsweetened cocoa
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 c plain yogurt
4 c shredded zucchini

frosting:
3/4 c butter
3/4 c unsweetened cocoa
5 c powdered sugar
1 tbsp vanilla
1/2 c milk

Recipe Directions for Zucchini Fudge Cake

  1. CAKE:

  2. cream butter and sugar

  3. add eggs and beat

  4. add vanilla

  5. stir in dry ingredients alternately with yogurt

  6. stir in zucchini

  7. Bake in 4 8 inch layers, 350 F for 25-30 minutes

  8. cool 10 minutes and remove from pans

  9. cool completely

  10. FROSTING:

  11. beat butter then add sugar, cocoa, vanilla and milk and beat until fluffy

  12. frost cooled cakes that have been removed from pans
