Zucchini, carrot, apple, raisin, and walnuts in a low fat spice bread that's amazing drizzled with honey!

Recipe Ingredients for Zucchini and Fruit Bread

1 1/2 cups wheat flour
1 1/2 cups white flour
1 cup brown sugar
1 cup white sugar
1 teaspoon baking soda
1 zucchini
1 carrot
1/2 apple
1/2 cup raisins
2/3 cup walnuts
1 tablespoon honey
1 teaspoon nutmeg
1 teaspoon cinnamon
2 teaspoons vanilla
1 teaspoon orange zest
100 grams apple sauce (unsweetened, apple/fig is good too!)
2 eggs

Recipe Directions for Zucchini and Fruit Bread

Shred the zucchini and carrot, place in a mixing bowl with the chopped apple and raisins. Add the flour, sugar, nutmeg, cinnamon, soda, and vanilla. Begin to incorporate. In a separate small bowl beat the two eggs, then add to the mixture along with the apple sauce . Mix all ingredients well. Stir in the orange zest and walnuts. Pour batter into two greased loaf pans. Bake for 45-60 minutes at 350 or until knife inserted comes out clean.
