Zucchini Frittata Recipe

I peel the zucchini to hide it from the kids and call this "scrambled egg pie".

Recipe Ingredients for Zucchini Frittata

8 eggs
1 c 2% milk
1/2 c shredded Parmesan
1 c grated zucchini
1/2 c chopped onion
3 tbsp extra virgin olive oil
1 tbsp chopped garlic

Recipe Directions for Zucchini Frittata

  1. Saute zucchini, onion, and garlic in olive oil in oven safe pan.

  2. Mix eggs and milk. Add salt and pepper to taste.

  3. Add eggs to pan with zucchini mixture.

  4. Cook until you can tell it's almost cooked thru (just loose on top). Cook it on med and DO NOT SCRAMBLE.

  5. Sprinkle cheese on top and place under the broiler until top is set and cheese is browned.

  6. Cut into six pie pieces and serve. Can be served with salsa or marinara sauce.
