Thrown together from a few different recipes found online. Hubby loved it, so now it will live on for eternity.

Recipe Ingredients for Zucchini Frittata

1 T olive oil
1 small onion
3 small zucchini
5 dash salt
5 eggs
2 T rice milk
1 T fresh basil
1/2 t garlic powder
1/4 t ground black pepper
1 T olive oil

Recipe Directions for Zucchini Frittata

  1. Heat olive oil in an oven-safe pan. Saute onion until translucent. Add zucchini and salt. Cook until slightly browned.

  2. Beat together eggs, rice milk, and spices. Add zucchini mix to eggs, wipe pan clean, and heat olive oil in pan.

  3. Pour egg mixture back into pan and cook until mostly set. Move pan to oven and cook under broiler until top is browned. Keep an eye on it!
