Recipe Ingredients for Zucchini Frittata

1 tbsp olive oil
1 zucchini
1 clove of garlic
1/4 cup parmesan cheese
1 egg
1 egg white
1 salt and pepper to taste
1 basil to taste
1 parsley to taste

Recipe Directions for Zucchini Frittata

  1. Shred zucchini on the large-holed side of a cheese grater. Place the zucchini between paper towels to draw out as much water as possible.

  2. Heat olive oil over medium heat in an oven-safe pan.

  3. Add garlic and zucchini.

  4. Add basil and parsley. (You can also use mint in place of the basil)

  5. Let cook for a few minutes.

  6. Beat eggs in a separate bowl. Add the cheese.

  7. Pour over the zucchini and garlic mixture. Stir with a fork to incorporate the ingredients.

  8. Cook just until bottom sets, but not the top.

  9. Place under the broiler for 1-2 minutes, just until the top sets and turns golden-brown.

  10. Cut in slices and serve.
