Zucchini Fritata great with mixed greens

Recipe Ingredients for Zucchini Fritata

5 large zucchini
1/2 cup grated parmesan cheese
1/4 cup chopped parsley
3 eggs
1 cup egg whites
1 cup chopped onion
1 cup chopped mushrooms
1 salt and pepper to taste
1 tablespoon oil

Recipe Directions for Zucchini Fritata

  1. Heat oil in large pan

  2. add chopped onions

  3. add shredded zucchini

  4. cook until all liquid is gone

  5. add mushrooms

  6. mix eggs, egg whites, parsley, 1/4 of cheese in large bowl

  7. salt and pepper to taste

  8. add egg mixture to pan and cook until almost done

  9. sprinkle rest of cheese on top and bake in oven until top is brown and eggs are cooked through

  10. serve with salad! YUM
