Wonderful side dish. Brings some variety.

Recipe Ingredients for Zucchini Fries

4 sprays PAM
1 tsp oregano
1 1/2 tbs all-purpose flour
3/4 tsp salt
1/2 cup dried bread crumbs
2 medium zucchini
2 large egg whites

Recipe Directions for Zucchini Fries

  1. Panko-style bread crumbs are suggested here.

  2. Cut zucchini, about 7-inches each, in half then each half into long "french-fry" style lengths.

  3. Preheat oven to 425F. Coat baking sheet with PAM. In small bowl, mix seasoning, flour and salt. Place bread crumbs in another small bowl. Whip egg whites until frothy.

  4. Dredge zucchini in flour mixture, then dip into egg whites; dredge in crumbs. Place on baking sheet and liberally coat with PAM.

  5. Roast, turning once, until desired crispness, about 12 minutes.

  6. This technique can be used with summer squash, eggplant or onion rings and even green tomato slices.
