Zucchini Fettucine Recipe

This recipe was in a gourmet low carb cookbook. It is delicious.

Recipe Ingredients for Zucchini Fettucine

1 1/2 pounds zucchini, small, halved
1 1/4 t. fine sea salt
2 T. heavy whipping cream
2 T. unsalted butter
1/4 t. lemon juice
1 pepper

Recipe Directions for Zucchini Fettucine

  1. Cut zucchini in half and place cut side down.

  2. Slice 1/8" thick slices.

  3. Toss noodles with 1 t,. salt and drain in colander for 15 minutes.

  4. Bring saucepan of water to boil.

  5. Blanch zucchini in water for 1 minute and then drop in ice water to stop cooking.

  6. Pat zucchini with a towel and refrigerate until you are ready for it.

  7. Place large saute pan over low heat and add 2 T. unsalted butter and 2 T. heavy cream.

  8. When the butter melts add the zucchini and cook, stirring occasionally until the sauce thickens and coats the zucchini. (about 2 minutes)

  9. Stir in lemon juice, 1/4 t. fine sea salt and a few grinds of pepper.

  10. Serve immediately.
