Add in "sargento reduced fat 4 cheese shredded mexican blend" 1 1/2 cups per recipe

Recipe Ingredients for Zucchini Enchiladas (minus cheese)

1 tsp olive oil
2 cloves garlic, crushed
1/4 cup red onion, chopped
2 medium zucchinis, grated
1 kosher salt
1 fresh ground pepper
4 whole wheat tortillas

Recipe Directions for Zucchini Enchiladas (minus cheese)

Saute garlic, onion & zucchini in olive oil about 4 minutes. Remove from heat and stir in 1/2 cup cheese. Roll into tortillas and cover with sauce and remaining 1 cup cheese. Bake at 350F for 20 minutes or until cheese is melted.
