Recipe Ingredients for Zucchini and Eggplant Lasagna Recipe

6 1/10 ounces raw onion
7 3/5 ounces raw celery
6 1/2 ounces raw carrot
21 3/5 ounces raw zucchini
7 3/10 ounces frozen spinach
15 3/5 ounces raw eggplant
8 ounces ground turkey
7 1/2 ounces ricotta cheese
1 1/2 cups tomato sauce
1 cup mozzarella cheese
1 tablespoon extra virgin olive oil

Recipe Directions for Zucchini and Eggplant Lasagna Recipe

  1. Saute carrot, onion, and celery in the olive oil over medium heat with some cloves of garlic. You can add mushrooms too if you desire.

  2. When tender, add tomato sauce and blend using stick blender.

  3. Defrost the spinach and squeeze out all extra water. Stir in ricotta cheese.

  4. Saute the ground turkey in a little olive oil. Drain. Add a little of the tomato sauce and mix together.

  5. Cut the zucchini and eggplant into thin slices using a mandolin or knife.

  6. Layer the zucchini and eggplant with the cheese/spinach mixture, meat, and sauce. Top with mozzarella cheese.

  7. Bake in 325 degree oven for 45 minutes covered. Remove cover, cook for additional 15 min.
