cheesy zucchini egg casserole. very quick to make, pretty low in carbs (just omit flour and sugar for even lower carb version), can also substitute the cream for the yogurt for an atkins style dish. Great warm with a salad for supper, or as a make ahead breakfast on the go. Very versatile and does well with many substitutions. great source of protein.

Recipe Ingredients for Zucchini Egg Bake

8 eggs
1 cup nonfat yogurt
2 tbl flour
1 tbl mustard powder
2 cups shredded cheddar cheese
4 small zucchini
1 tbl butter
1 salt and pepper

Recipe Directions for Zucchini Egg Bake

  1. preheat oven to 325

  2. saute sliced zucchini in butter

  3. spread into glass baking dish

  4. whisk rest of ingredients in bowl

  5. pour over zucchini

  6. bake for 30-35 minutes.

  7. tasty served warm or cold.
