Recipe Ingredients for Zucchini curry with tomatoes

675 g zucchini
2 tbsp oil
1/2 tsp cumin seed
1/2 tsp mustard seed
1 1/2 c onion, sliced
1 1/2 tbsp garlic, crushed
1/4 tsp turmeric, ground
1/4 tsp chili powder
1 tsp coriander, ground
1 tsp cumin, ground
1/2 tsp salt
1 tbsp tomato paste
14 oz tomatos, chopped
2/3 c water
1 tbsp cilantro, chopped

Recipe Directions for Zucchini curry with tomatoes

  1. cut zucchini into 1/2'' slices

  2. heat oil and fry cumin and mustard seeds until they splutter

  3. add sliced onion, fry until clear

  4. add garlic

  5. add turmeric, chili powder, ground coriander, cumin and salt and fry for about a minute or two

  6. add zucchini, cook for 5 minutes and stir coninuously

  7. mix tomato paste and chopped tomatoes

  8. add tomato mixture to pan with water

  9. cover and simmer for 10 minutes or until sauce thickens

  10. stir in cilantro and 1 tsp garam masala (if you don't have this, don't add it)

  11. cook until zucchini is tender, server over rice.
