Recipe Ingredients for Zucchini Crepe

1 pound zucchini
1/4 cup egg beaters
3 tablespoons of olive oil

Recipe Directions for Zucchini Crepe

  1. Grate squash coarsely and press between paper towels to rid of excess water. Place in a bowl with egg beater, salt and pepper.

  2. Heat 2 tablespoons of oil in a large frying pan. When very hot add all the zucchini and spread with a fork so that you have a large crepe of even thickness. Cook over moderately high heat for 5-6 minutes until underside is browned. Then slide crepe onto a large plate.

  3. Place 1 more tablespoon of oil in the pan. Slide the crepe into the pan by placing a second plate on top of the crepe and turning over. Finish cooking 5-6 minutes.

  4. Serve immediately
