just like sugar cream pie but made with fresh zucchini. use Splenda ( 240 cals) or white sugar (194 cals)

Recipe Ingredients for zucchini cream pie

1 1/2 cups zucchini
1 cup evaporated milk
2 cups white sugar
1 egg
3 tablespoons margarine
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 pinch salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pie crust

Recipe Directions for zucchini cream pie

  1. 1. boil zucchini until tender, drain water and cool then squeeze excess water out.

  2. 2. put zucchini, evaporated milk, sugar, egg, margarine, flour, vanilla, and salt into a blender and blend until smooth.

  3. 3. pour into 9 inch pie shell. sprinkle with cinnamon and nutmeg. bake at 425 degrees F for 5 minutes. reduce to 350 degrees F for 45 mins or until set. baking times will very.
