Recipe Ingredients for Zucchini "Crab" Cakes

2 1/2 c grated zucchini
1 1/2 tsp Ener-G Foods Egg Replacer
2 tbsp water
2 tbsp Earth Balance butter, melted
1 c bread crumbs
1/4 c minced onion
1 tsp Old Bay Seasoning
1/4 c all-purpose flour
1/2 c vegetable oil for frying

Recipe Directions for Zucchini "Crab" Cakes

  1. Squeeze moisture out of grated zucchini, using paper towels.

  2. In a small bowl or measuring cup, combine the egg replacer and water - this serves as the egg in the recipe.

  3. In a large bowl, combine zucchini, "egg", and Earth Balance. Stir in crumbs, minced onion, and seasoning. Mix well.

  4. Shape mixture into patties. Dredge in flour.

  5. In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.
