A lovely Faux Crab Cake..it's not crab, but it's yummy!

Recipe Ingredients for Zucchini 'crab' cakes

5 c grated zucchini, excess liquid squeezed out
2 eggs, beaten
4 T butter, melted
2 c breadcrumbs (plain)
1/2 c minced onion
1 T old bay

Recipe Directions for Zucchini 'crab' cakes

  1. mix everything together

  2. make patties.

  3. bake at 400, 12-16 minutes per side or so.
