Zucchini "Crab" Cakes Recipe

Regular bread crumbs (or seasoned) - calls for 1 cup; I used just a little more than 1/2 cup to save calories! Panko Crumbs: I used 1/2 cup to coat cakes before baking.

Recipe Ingredients for Zucchini "crab" cakes

2 large Squash, Summer, Zucchini, Includes Skin
1 large Egg, Whole
3 oz Bread Crumbs
1/4 cup, chopped Onions
2 tsp Magic Seasoning Blends
2 oz Bread Crumbs
2 tbsp Extra Virgin Coconut Oil

Recipe Directions for Zucchini "crab" cakes

  1. Grate zucchini, then put in colander and add 1/2 tsp salt. Leave for 30 min - 1 hr to remove excess water.

  2. In a large bowl, combine zucchini & egg. Stir in the seasoned bread crumbs, minced onion, and seasoning.

  3. Mix well.

  4. Shape mixture into patties.

  5. Cover with panko bread crumbs.

  6. Melt coconut oil in baking pan and place zucchini cakes in pan, turning over to coat all sides.

  7. Bake at 400 degrees for 12-15 minutes. Turn and bake for an additional 12 - 15 minutes.
