Recipe Ingredients for Zucchini couscous

1 cup couscous, dry
1 cup chicken broth
2 cloves garlic
1 1/2 tbsp extra virgin olive oil
2/3 cup zucchini, grated
1/3 cup cherry tomatoes

Recipe Directions for Zucchini couscous

  1. Boil the chicken broth and pour all the couscous in, turn off the heat and cover with a lid

  2. In the meantime, saute garlic with olive oil, and add grated zucchini.

  3. Sautee for a minute, when zucchini is cooked to your liking

  4. Mix the couscous mixture with zucchini mixture and add salt and pepper to your liking.

  5. Chop cherry tomatoes and put them in the mixture.

  6. Serve warm.
