Creamy pasta with zucchini and chickpeas

Recipe Ingredients for Zucchini, Chickpeas with Fetuccini

12 oz pasta
2 zucchinis
2 cloves of garlic
1/2 cup shredded parmesan
1/2 teaspoon salt
15 oz chickpeas
2 tablespoons olive oil
1/4 teaspoon red pepper flakes

Recipe Directions for Zucchini, Chickpeas with Fetuccini

  1. Prepare pasta (save 1/2 cup of the water)

  2. Slice zucchini into thin half moons

  3. Slice pasta

  4. Rince chickpeas

  5. Add olive oil to frying pan

  6. Sautee zucchini til limp

  7. Add Garlic, chickpeas and red pepper flakes, cook for 5 more minutes.

  8. Drain pasta, return to pan, add reserved cooking water and 1/2 of the parmesan cheese, stir until creamy.

  9. Place pasta in bowls, top with zucchini mixture and sprinkle with parmesan cheese.
