Mediteranean- high protein, low cholesterol! Zucchini patties with chick peas and mushrooms, lightly grilled/fried with fresh tomatoes marinated in italian dressing!

Recipe Ingredients for Zucchini Chick pea patties with fresh tomatoes

2 cups zucchini, julienne
2 eggs
2 cups garbanzo beans
1 cup mushrooms
1 tsp red pepper flakes
1/4 tsp pepper
1/4 tsp salt
1 tbsp olive oil
1 cup tomato, diced
2 tbsp italian dressing
3/8 cup mozzarella cheese

Recipe Directions for Zucchini Chick pea patties with fresh tomatoes

  1. julienne zucchini, into large mixing bowl

  2. add 1 can of drained garbanzo beans

  3. add chopped mushrooms

  4. add half of the cheese- chopped, shredded, whatever

  5. add eggs and mix

  6. add spices- red pepper, salt, black pepper, basil etc.

  7. preheat cast iron griddle

  8. chop tomatoes and marinate in italian dressing

  9. spray the griddle lightly with olive oil

  10. drop the zucchini mixture onto the griddle in tablespoon-fulls, squish as you go- its okay if the patties are a bit crumbly

  11. when the bottoms cook a bit, flip the patties and sprinkle a pinch of cheese on top

  12. after a bit, remove from the griddle-- make sure the egg is all cooked in it!

  13. top with fresh marinated tomatoes- i like it better when the tomatoes are just a bit colder...

  14. enjoy!
