Recipe Ingredients for Zucchini Cherry Muffins

3/4 cup egg substitute
1/2 cup canola oil
3/4 cup unsweetened applesauce
1/2 cup sugar
2 tbsp honey (optional)
2 cups zucchini, shredded
2 cups whole wheat flour
2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
3 tbsp cinnamon
120 grams dried cherries (1 cup)

Recipe Directions for Zucchini Cherry Muffins

  1. Combine all ingredients except cherries and mix well.

  2. Fold in cherries.

  3. Spoon into muffin cups and bake at 350 for 20-30 minutes.

  4. Remove from tins and let cool on wire rack.

  5. Store in refridgerator.
