This stewlike dish can be served as a main dish or a side dish, plain or over rice. You can add fresh mozzerella over the top and put in the oven to melt the cheese to make it like lasagna.

Recipe Ingredients for Zucchini Casserole1

3 lbs Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
1 Peppers, Sweet, Green
1 Peppers, Sweet, Red
3 Onions
1 Peppers, Sweet, Yellow
12 medium Squash, Summer, Zucchini, Includes Skin
1 tsp Extra Virgin Olive Oil from Tuscany
3 clove Garlic
21 serving Delmonte Diced Tomatoes w/Basil, Garlic and Oregano

Recipe Directions for Zucchini Casserole1

  1. Saute onions and garlic w/ EVOO

  2. Add 2lbs ground beef, Italian Seasoning to brown

  3. Remove meat, save juices

  4. Saute green, red and yellow peppers, green and yellow zucchini in the juices from the meat (add Italian Seasoning to taste)

  5. Drain and add meat and cans of diced tomatoes
