Recipe Ingredients for Zucchini Casserole with Spinach

4 small zucchini
5 medium eggs
2 oz. feta cheese
1/8 cup parmesean cheese
1/4 cup spinach
1/2 cup onions

Recipe Directions for Zucchini Casserole with Spinach

  1. Cut four small or two medium zucchini's

  2. place in greased casserole dish

  3. Microwave for five minutes until tender

  4. Blend 5 eggs and pour over zucchini

  5. chop spinach and feta and blend in with egg and zucchini

  6. top with onions

  7. bake on 400 degrees until center of egg is firm.
