Zucchini, rice and sausage in a tomato base.

Recipe Ingredients for Zucchini Casserole

1/2 cup Instant rice, uncooked
1 cup water
1 lb pork sausage
1/4 cup chopped onion
1 cup diced tomatoes
1/2 lb Light Velveeta
1 pinch dried oregano
4 cups zucchini, cubed

Recipe Directions for Zucchini Casserole

Cook rice in water as directed on package. Preheat oven to 325 degrees. Cook sausage and onion in large skillet over medium heat, stirring until browned. Drain off excess grease. Stir in tomatoes, rice and cheese. Season with oregano, and salt / pepper if desired. Spread into a 9x13 inch baking dish or a 2-quart casserole dish. Bake uncovered for 1 hour or until lightly browned and bubbly.
