This wasn't to my taste, but some of the Prism members really liked it. It's worth a try.

Recipe Ingredients for Zucchini Casserole

2 medium zucchini, chunked
3 stalks celery, diced
1 medium onion, diced
4 slices whole wheat bread, dried and cubed, not crumbs
2 eggs, beaten
1 c. cheddar cheese, shredded

Recipe Directions for Zucchini Casserole

  1. Saute zucchini, celery, and onion in water until translucent.

  2. Drain and cool.

  3. In a large bowl mix egg into zucchini mixture until coated.

  4. Add bread and mix lightly.

  5. Place parchment paper in the bottom of a 9X13 pan.

  6. Press down lightly in pan.

  7. Bake for 45 minutes at 350 degrees.

  8. Add cheese and bake until melted.

  9. Serve hot or cold.
